How to make pancakes without a mix:

We were wondering what to eat for dinner tonight, so I found a recipe for pancakes, and after changing some stuff around to match what we had in the house, this is what we came up with:


* 3 cups all-purpose flour
* 7 teaspoons baking powder
* 2 teaspoon salt
* 4 tablespoons white sugar
* 2 1/2 cups milk
* 1 egg
* 6 tablespoons olive oil
* 2 tablespoons of vanilla

DIRECTIONS

1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and oil; mix until smooth adding warm water till its the right consistency.
2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

They turned out reasonably well, and weren't too hard to make. The kids seem to prefer them to regular Krust-Eze mix. That name cracks me up.

I have been making pancakes without a mix lately too... we ran out, and I decided without the mix was just as good or better - and probably healthier, and maybe cheaper? I am curious if you could taste the olive oil (in a good or bad way). It sounds like you have been a great dad/ husband running the house for the weekend. Hopefully the week gets better from here!

I am not a super good judge of taste, but I was a little worried about Mediterranean flavored pancakes. As it turned out, I couldn't taste it at all, and nobody else said anything. It could be that the vanilla overpowered the olive too.
